Welcome to the sixth episode and series of, What You Cooking Good Looking – Cooking with CRPS 

This series will be where I document my own original recipes once or twice a month, using alternative ingredients to replace foods that I’m intolerant to or that is a fun and creative way to experiment with a classic dish. My relationship with food hasn’t been the best, especially speaking over the past few years and so I’m trying to motivate myself to get back into experimenting with food like I’ve always loved doing whilst trying out my own recipes for meals I haven’t eaten in a long time.

Total Time: 45 mins

Ingredients:

  • Plain flour
  • Baking powder
  • Salt
  • Dairy-free butter – @vitalite
  • Water

Sweet Chili Sauce:

  • Hot pepper sauce
  • Plain flour (1 tablespoon)
  • Lemon juice
  • Thyme
  • Sugar
  • Soy sauce

Filling:

 

Step 1: Mix Roti Dough

Add plain flour, salt, baking powder in a bowl and mix. Add dairy-free butter and combine ingredients with hands. Add cold water into the bowl slowly whilst kneading ingredients into a dough consistency.

Once the dough is formed, leave in a bowl to rest for 25 minutes & move onto preparing the filling ingredients in the meantime.

Step 2: Prepare Filling

Use a frying pan to cook vegan meat pieces and add chopped spring onion, thyme. This vegan meat by Linda McCartney is flavoured with seasoning and doesn’t need too much added. Break apart lettuce and wash. Cut avocado into pieces.

*Feel free to add or skip any filling ingredients in the sauce for the desired taste!

 

Step 3: The Sauce

Mix hot pepper sauce, soy sauce, lemon juice, plain flour, sugar and water into the pan and mix to form a sweet chilli sauce.

Step 5: Serve & Enjoy 😋

 

All ingredients are now ready to self serve and enjoy in your roti wrap!

With a few rotis made you’ll have lunch prepared for a few days ahead. You can try different fillings in your roti as you desire. Also, this easy meal can be eaten hot or cold.
