Dairy-Free Banana Pancakes (Dry Fry)

This series will be where I document my own original recipes once or twice a month, using alternative ingredients to replace foods that I’m intolerant to or that is a fun and creative way to experiment with a classic dish. My relationship with food hasn’t been the best, especially speaking over the past few years and so I’m trying to motivate myself to get back into experimenting with food like I’ve always loved doing whilst trying out my own recipes for meals I haven’t eaten in a long time.

Dairy-Free Banana Pancakes (Dry Fry)

This week I decided to make dairy-free banana pancakes, no oil or butter used to fry.

Dairy-Free Banana Pancake Ingredients

 

Total Time: 25 mins (Pancake batter prepared night before)

Ingredients:

  • Self-rasing flour (if you have no self-raising, you can use plain flour and add 1 to 2 teaspoons of baking powder)
  • 1 Banana
  • Caster sugar
  • Almond milk
  • Vanilla essence (1 Tablespoon)
  • Water

The sauce:

  • Cinnamon
  • Chocolate sauce
  • Alpro dairy-free vanilla yoghurt
  • Mixed fruits

Feel free to add or skip any ingredients in the sauce for the desired taste!

 

Step 1: Mix Panacake Batter

Mash banana until it becomes smooth enough to add to flour. Mix together flour, banana, almond milk, vanilla essence, water and caster sugar until you get a sloppy texture and all ingredients are bound together.

Step 2: Fry Pancakes 

DON’T use any OIL or BUTTER TO FRY!

Use a wooden spoon or icecream scoop to share batter into the frying pan. Once in the pan, cover with fryer lid so the steam can cook it through and so the pancake can rise to get fluffy in the middle.

Brown each side for a couple of minutes, making sure to use the lid on and off technique for the fluffy centre result.

*You can leave your pancake mix in the fridge overnight if you wish, make sure to cover it over so you can fry the next day

 

Step 3: The Suace

Mix chocolate sauce and cinnamon powder into a microwaveable container and heat on high for 10 seconds or until you see heat bubbles.

Pour dairy-free vanilla yoghurt, add fruits.
