Welcome to the second episode and series of, What You Cooking Good Looking – Cooking with CRPS 

This series will be where I document my own original recipes once or twice a month, using alternative ingredients to replace foods that I’m intolerant to or that is a fun and creative way to experiment with a classic dish. My relationship with food hasn’t been the best, especially speaking over the past few years and so I’m trying to motivate myself to get back into experimenting with food like I’ve always loved doing whilst trying out my own recipes for meals I haven’t eaten in a long time.

Gluten-Free Pancakes & Summer Fruits

This week I decided to make gluten-free pancakes.

It was awful LMAO!!!!!!! They definitely didn’t turn out as great as my Vegan Mac & Cheese

Non the less I’m glad I didn’t give up tho. Lol but what a nightmare this episode was Lol 🤦🏾

Gluten Free Pancakes & Summer Fruits ingredients - Laura Spoonie
Ingredients

Total Time: I don’t even know (too long) 😂

Ingredients:

  • Gluten-free Muesli (Apple & Raspberry chunks)
  • Gluten-free Pure Oats
  • Alpro almond milk – unsweetened
  • Banana
  • Strawberries
  • Blueberry
  • Caramel sauce
  • Sunflower oil

 

Step 1: Blend Gluten-Free Oats & Muesli

Find any kind of blender to put your oats and muesli. Make sure it’s finely blended so it becomes the same consistency/texture as regular plain white flour.

Once gluten-free oats and muesli are blended add a couple chunks of banana and almond milk into the mix so that the pancake batter becomes banana flavoured.

*If you don’t like banana you can totally skip the ingredient

Once you see the batter has air bubbles inside the blender you’re ready to move on to step 2

 

 

 

 

Step 2: Fry pancakes

Pour some sunflower oil into your frying pan (preferably non-stick)

Make sure you have a spatula at hand to turn the pancakes over

Step 3: Dish

Cut up some strawberries and place on a plate with your pancakes, you can also add some blueberries as well.

Drizzle some caramel sauce on top and Bon Appetite!
